Dark n Smoky

A refreshing, tropical spin on the classic Dark n Stormy with notes of smoke and pineapple 🍍 🍹💨 Infusing the aromatic and funky Jamaican Overproof Rum with smoky lapsang souchong tea adds notes of earthiness and smoke to the tropical fruit and caramelized sugar notes in the rum while additions of Blackstrap rum, pineapple rum, and rum barrel-aged Islay Scotch contribute additional molasses notes while boosting the pineapple and smoke notes. The fresh lime juice and pineapple tepache add zip and acidity while complementing the tropical flavors while ginger syrup and a splash of pineapple liqueur add a spicy tropical base note that helps balance the drink. Delicious! 1 oz Lapsang Souchong-Infused Jamaican Overproof Rum (Smith & Cross, Hampden Estates or Worthy Park Overproof, etc) .5 oz Blackstrap Rum (Rum distilled from blackstrap molasses; Cruzan makes a very nice bottle at a great price) .25 oz Plantation Stiggins Fancy Pineapple Rum .25 oz Rum Barrel-Aged Islay Scotch (Ardbeg Drum is excellent; Ardbeg 10 or similar smoky Islay can probably sub) 1 oz Fresh Lime Juice .5 oz Ginger Syrup (juice 1 knob of ginger and add two volumes granulated sugar to one volume of ginger juice; blend until sugar has dissolved) .25 oz Pineapple Liqueur (Giffard; can sub pineapple gomme syrup) Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz Pineapple Tepache (fermented, carbonated beverage with pineapple rind, piloncillo, spices from Mexico). Garnish with a swizzle stick and cocktail umbrella #weekendtiki
