Dante’s Jungle Bird

A low ABV riff on the modern classic from excellent NYC bar Dante that amps up the bitterness
The pineapple and overproof Jamaican rum work with the fluffy pineapple juice to deliver a tropical wallop while the bittersweet Campari and rhubarb amaro bring a juicy yet mouth puckering bitter finish that keeps things from becoming too sweet and leaves you wanting another sip. A barspoon of lime juice helps balance the flavors and acidity
.5 oz Plantation Stiggins Fancy Pineapple Rum
.25 oz Jamaican Rum (Overproof option like Hampden or Smith & Cross is best but Appleton Signature works)
.5 oz Campari (or other red aperitivo of choice)
.25 oz Rhubarb Amaro (Zucca or Amaro Sfumato are both really nice)
2.5 oz Fresh Pineapple Juice
Barspoon Fresh Lime Juice
Shake with ice and strain into a chilled double rocks glass with a few ice cubes. Garnish with an orange twist or pineapple frond
