Cyrano

A sophisticated, tropically-tinged Old Fashioned/Julep riff from Death & Co’s Denver outpost The burnt caramel and molasses notes of the aged agricole rhum pair wonderfully with the roasted pineapple notes of the Stiggins rum and pineapple liqueur while the Cynar brings a welcome bittersweet note that balances the richer flavors. The bit of muddled lime brightens up the flavor a bit, the bitters add a touch of allspice and clove, and the mint adds a pleasant aroma Cut a quarter-sized disk from a lime (cutting deep enough to obtain some flesh from the lime) and muddle in a chilled double rocks glass Add the following to the glass: 1 oz Aged Agricole Rhum (Clement VSOP, Rhum JM VSOP, etc) .75 oz Cynar (maybe step down to .5 oz if using 70 proof version) .25 oz Plantation Stiggins Fancy Pineapple Rum Tsp Pineapple Liqueur/Pineapple Gomme Syrup (Giffard for the former, Small Hand Foods the latter) 1 dash Angostura Add 3-4 ice cubes to the glass and stir for 10-15 seconds.
