Cuba Libre

A refreshing, slightly updated version of the classic Rum Highball with a bit of extra citrus and ginger spice The molasses, vanilla, and citrus peel notes in the rum work very well with the Cola while the fresh lime juice and ginger/allspice/lime notes in the bitters add tartness and a bit of spice that ties everything together. The Cola also adds nice effervescence 1.5 oz Blended Lightly Aged Column Still Rum (Cana Brava, Plantation 3 Star, etc) .5 oz Blended Lightly Aged Dark Rum (Coruba is nice, Doctor Bird would also be good) .75 oz Fresh Lime Juice 1 dash Lime Bitters (Scrappy’s) 1 dash Ginger/Allspice Bitters (Bittercube Jamaican #1, etc; Angostura could sub in a pinch) Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 3 oz of Mexican Coca Cola and garnish with a swizzle stick
