A refreshing, summery hybrid Pimm’s Cup/Beer Cocktail riff with notes of citrus and the summer garden 🍹🥒🍋🍈
The Japanese gin has notes of yuzu along with juniper and other botanicals that combines with the green melon notes in the Ginjo sake and the green apple and saline notes in the Manzanilla sherry to form a light base that helps highlight the cucumber and citrus notes from the cucumber-infused beer and the bright, tart lemon juice. The Pimm’s adds complementary sweetness and herbal notes while the splash of Chareau and cucumber bitters boost the cucumber and melon notes
1 oz Gin (Japanese style gin like Roku, Nikka, etc works well here)
.5 oz Ginjo Sake (lighter cucumber and green melon notes)
.5 oz Manzanilla Sherry (Hidalgo, La Guita, Bodegas Yuste, etc; manzanilla is more dry with green apple and saline notes)
.75 oz Fresh Lemon Juice
.5 oz Pimm’s #1 Liqueur (lightly bittersweet with some floral notes)
.25 oz Chareau Aloe Liqueur (Cucumber and green melon notes)
1 dash Bitter Truth Cucumber bitters
Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz of cucumber infused light beer (Temescal Cucumber Kolsch, Humblesea Kookumber Gose, etc). Garnish with a cucumber wheel and swizzle stick
