Quite possibly my favorite Old Fashioned variation from Brian Miller during his Death & Co days
Applies the tiki principle of layering flavors by splitting the base spirit. Bourbon brings baking spice and oak, rye brings spice, cognac brings a nice lightness, and the Calvados gives a lovely apple/fall spice flavor. The chocolate mole and Angostura bitters tie everything together .5 oz Bourbon .5 oz Rye (higher proof is nice)
.5 oz Cognac (Grand Reserve or VSOP)
.5 oz Calvados
.25 oz Rich Simple Syrup (2:1)
2 dashes Angostura Bitters
1 dash Bittermens Xocolatl Mole Bitters
Stir with ice, strain into double rocks glass with a large ice cube. Garnish with lemon and orange twist
