A Tequila-based Manhattan variation that proves the versatility of beer in cocktail applications The grapefruit and passionfruit notes in the IPA syrup complement the bittersweet notes from the Cynar while the butterscotch and oakiness of the Reposado tequila provides a nice counterpoint. The hopped grapefruit bitters and grapefruit twist enhance the aroma 2 oz Reposado Tequila (since it’s a stirred drink, want a Reposado that you’re happy to sip neat) .5 oz Cynar (Italian amaro with bittersweet notes) .5 oz IPA syrup (1 part hazy, aromatic IPA: 1 part granulated sugar; stir under low heat until sugar dissolves) 2 dashes Bittermens Hopped Grapefruit Bitters Stir with ice and strain into chilled coupe. Garnish with a grapefruit twist
