A classic Tiki punch from Don the Beachcomber that is brimming with citrus and rum funk 🐍 🍊🍹
The blend of Jamaican rums and aged Demerara rum creates a base with flavors of molasses, baking spice, and caramelized sugar with a huge nose of ripe tropical fruit that works nicely with bright citrus flavors of the orange and lime juice. The passionfruit liqueur boosts the tropical sweet/tart notes while the splash of Swedish Punsch adds funk and a bit of spice while the touch of pomegranate adds sweet/tart depth and the dash of absinthe helps tie everything together
1 oz Lightly Aged Pot Still Jamaican Rum (Plantation Xaymaca; Appleton Signature)
.5 oz Lightly Aged Demerara Rum (El Dorado 8 yr; Hamilton Demerara, etc)
.5 oz Jamaican Overproof Rum (Hampden, Smith & Cross, etc)
.75 oz Fresh Orange Juice (even brighter/better if you can use Cara Cara orange while in season)
.75 oz Fresh Lime Juice
.5 oz Passionfruit Liqueur or Syrup (Giffard for Liqueur; Small Hand Foods for syrup)
.25 oz Swedish Punsch (Rum and Arrack-based liqueur with spice and aged leather notes)
.25 oz Grenadine (Small Hand Foods or 1:1 mix of Pomegranate molasses and simple syrup)
2 dashes Absinthe (Herbsaint also works well)
Shake with ice and strain into a chilled double rocks or Mai Tai glass with crushed ice. Garnish with a swizzle stick, orange twist and (if handy) a sprig of fresh mint
