Cherry-Coloured Funk

A refreshingly funky Daiquiri/Highball inspired by the flavors of a cherry-lime rickey and great for sipping on a warm summer evening🍒🍹 The blend of lightly aged rum and Overproof Jamaican rum work with the cherry eau de vie/Kirschwasser to create a base with power and funk (with plenty of tropical aromas) that help highlight the cherry (from muddled fresh fruit and Maraschino liqueur) and lime flavors. The falernum adds a touch of spice and balancing sweetness while the bitters tie flavors together and bring some notes of Bay leaf and black pepper and the soda water adds effervescence Muddle 3 pitted cherries in .5 oz Falernum (Rum-based liqueur from Barbados with notes of clove and lime zest) Add: 1 oz Blended Lightly Aged Rum (Probitas, Plantation 3 Star, El Dorado 3 yr, etc) .5 oz Overproof Jamaican Rum (Wray & Nephew or Rum Fire) .5 oz Cherry Eau de Vie/Kirschwasser (Clear Creek, Rhine Hall, etc) 1 oz Fresh Lime Juice .25 oz Maraschino Liqueur 1 dash Bitter End Chesapeake Bay Bitters Shake with ice and double strain into a chilled Collins glass with ice cubes. Top with 1.5-2 oz of LaCroix or club soda. Garnish with a swizzle stick #cocktailswithcocteau
