Carry That Weight

A tropical, slightly bitter, slightly dank beer cocktail for enjoyment at holiday grilling events The peach, pineapple, and lime pair very well with the mango notes in the Mosaic-hopped hazy IPA while the bit of juniper and botanicals in the Old Tom gin and the bittersweet notes in the Aperitivo work nicely with the hops in the beer .75 oz Aperitivo of Choice (Campari, St George Bruto, etc) .5 oz Old Tom Gin (Scofflaw or Hayman’s probably work better here than the maltier Ransom) .5 oz Fresh Pineapple Juice .5 oz Fresh Lime Juice .5 oz Honey Syrup (2 parts Honey: 1 part warm water) .25 oz Peach Liqueur (Giffard, Massenez, etc) Shake with ice and strain into a chilled Collins glass with a few ice cubes. Top with 1.5 oz Hazy, citrus forward IPA (with Mosaic hops is best option; I used Seven Stills Eight Pounds).
