Carrot Daiquiri

A bright, playful daiquiri variation from TJ Palmieri of Madrina’s in Gainesville, Florida that proves carrots 🥕
can play in cocktails too
The earthy sweetness of the carrot juice is a great foil for the spices in the falernum and is offset by the ripe fruit and molasses notes in the rum and the tart lime juice
1.75 oz Blended Lightly Aged Rum (Plantation 3 Star, Flor de Cana, Cana Brava, etc)
1 oz Fresh Carrot Juice
.75 oz Falernum (John D Taylor, Latitude 29, etc)
.5 oz Fresh Lime Juice
.25 oz Rich Simple Syrup (2:1)
Blend with 1 Cup crushed ice until creamy, add to footed pilsner glass. Garnish with a sprig of mint dusted with ground turmeric
