California Condor

A funky Daiquiri riff from Will Elliott of Brooklyn’s excellent Maison Premiere that contrasts bright tropical citrus with notes of spice and chocolate
The tropical funk, molasses, and spice notes from the blend of rums from Barbados, Jamaica, and St Lucia provide a flavorful base that is supplemented by the island friendly citrus blend of lime and pineapple juice (with some essential oils from the orange twist) while the Habanero and chocolate mole bitters and finishing notes of spice and cacao
1 oz Blended Lightly Aged Rum (Probitas, Plantation 3 Star, El Dorado 3 yr, etc)
.75 oz Aged St Lucia Rum (Admiral Rodney, Hamilton St Lucia Pot Still, K&L Faultline St Lucia all excellent bottles)
.75 oz Fresh Pineapple Juice
.75 oz Lime Cordial (mix of equal parts lime juice and simple syrup)
.5 oz Fresh Lime Juice
1 dash Habanero Tincture(Bittermens Hellfire Habanero, Scrappy’s Firewater, etc)
1 dash Chocolate Mole Bitters (Bittermens Xocolatl Mole, Miracle Mile Chili and Chocolate, etc)
Shake with ice and strain into a chilled coupe. Garnish with an orange twist (after expressing essential oils over drink)
