Boss Colada

A tropical, yet herbal and refreshing, Sour variation from Nick Detrich of NOLA’s fantastic Cane and Table
The pineapple, lime, and orgeat work with the funky rum to give an aromatic and tropical backbone while the Malort dries things out considerably while adding some interesting bitter/herbal notes and a pleasant floral aroma
1 oz Malort (Few Anguish and Regret, Letherbee Besk, Baska Snaps; would avoid using Jeppson’s unless you hate life)
.5 oz Lightly Aged, Blended Jamaican Rum (Appleton V/X Signature is great, Banks 7 Golden Age, etc)
1.5 oz Fresh Pineapple Juice
.5 oz Fresh Lime Juice
.5 oz Orgeat
Shake with ice, strain into glass with crushed ice. Top with 3 dashes Peychaud’s/Bitter Truth Creole Bitters. Garnish with a pineapple leaf and lime wheel
