A refreshing, warm-weather Margarita riff from Andrew Moore of Portland’s Ox The fennel underlines the floral notes in the strawberry and complements the herbal complexity of the Blanco tequila while the citrus is accented by the bright strawberry flavor and the salt rim Muddle 3 ripe strawberries in .5 oz Agave Syrup (2 parts agave nectar: 1 part warm water if not using existing agave syrup product like Tres Agaves) Add: 2 oz Blanco Tequila (make sure it’s 100% agave) .75 oz Fresh Lime Juice Pinch of fennel pollen or ground fennel seeds Rub the rim of a chilled double rocks glass with a lime wedge and roll the wet edge in a mix of 2 parts fennel pollen (or ground fennel seed): 1 part kosher salt to creat the salt rim Shake drink with ice and double strain into the salt-rimmed glass with a few ice cubes added. Garnish with a fennel frond
