Birch Tree

A fine, after-dinner Manhattan variation from Leo Robitschek of the NoMad Bar in NYC The coffee and root/birch beer notes meld really well with the vermouth and softer amaro while the cognac and aquavit provide an interesting base 1 oz Cognac (VSOP or Grande Reserve) .75 Linie Aquavit (want an aged version in this drink) .75 oz Sweet Vermouth (a lighter, fruitier vermouth like Cocchi works well) .5 oz Amaro Nonino (softer, grappa based amaro with notes of orange peel and caramel along with bitterness) .25 oz Coffee Liqueur (or .5 oz of Cold Brew Concentrate) 2 dashes Bitter Truth Aromatic Bitters (has pronounced root beer notes; can also use 1 dash of a sarsaparilla tincture, but it’s more laborious to prep) Stir with ice, strain into a chilled coupe. Garnish with a brandies cherry and grapefruit twist
