Big Ern McCracken

A Daiquiri/Sour hybrid using a nice blended scotch and complementary flavors Nuanced sweet notes from apricot, honey, vanilla and Madeira wine pair incredibly well with the honeyed malt and gentle peat, allowing you to taste each of the elements. The addition of lemon juice lightens the drink without making it tart 1.5 oz Blended Scotch (the gentle peat note in Compass Box’s Great King St Glasgow Blend works very well, but can try subbing others) .5 oz Madeira Wine (fortified wine from Portuguese Islands in the Atlantic That adds sweetness with some depth) .75 oz Fresh Lemon Juice .25 oz Honey Syrup (2 parts honey: 1 part water) .25 oz Vanilla Syrup (split and scrape vanilla bean into 1/2 cup each granulated sugar and water, stir until sugar dissolves, allow to simmer for 5 minutes) Shake with ice and strain into a chilled coupe.
