The blended Japanese whisky has notes of honey, toasted rice, and poached pear that works harmoniously with the richness of the coconut (from both the coconut creme and a splash of liqueur). Lime Juice and the Donn’s mix (grapefruit juice and cinnamon syrup) provide balancing acidity and complementary baking spice notes. A splash of smoky Islay malt adds depth and nuance to each sip. An absolutely smashing summer drink
1.5 oz Blended Japanese Whisky (Suntory Toki is a good option)
1 oz Donn’s Mix #1 (a staple in tiki drinks that is a mix of 2 parts fresh grapefruit juice: 1 part cinnamon bark syrup)
.5 oz Coconut Creme (mix equal parts unsweetened coconut milk and simple syrup and add a pinch of salt; blend until combined; adding a Tsp of lightly aged rum can help it last longer in the refrigerator)
.5 oz Fresh Lime Juice
2 Tsp Coconut Liqueur (Kalani or Rhum Clement)
Tsp Islay Scotch (Laphroaig 10 year is a great option)
Shake with ice and strain into a chilled double rocks glass filled with crushed ice. Garnish with grapefruit zest and a cocktail umbrella (toasted coconut is also a great add if you have any around)
