A nuanced, refreshing Margarita/Daiquiri riff that showcases the intriguing flavors of the fruit of the prickly pear cactus
The watermelon with subtle bubblegum notes of the prickly pear fruit work very nicely with the citrus zest and baking spice notes in Reposado tequila and the smoke/tropical fruit notes in the espadin mezcal. Splashed of strawberry liqueur, cinnamon syrup, and lime juice add complementary flavors and the bitters boost the prickly pear and lime notes
1.5 oz Reposado Tequila (El Tesoro, Arte Nom, Arette, etc)
.5 oz Mezcal (Espadin variety)
.5 oz Prickly Pear Juice
.25 oz Fresh Lime Juice
.25 oz Strawberry Liqueur (Giffard)
.25 oz Cinnamon Bark Syrup (crush 3-5 cinnamon sticks with equal volumes of granulated sugar and water; stir until sugar dissolves; simmer 5 minutes before straining)
1 dash Scrappy’s Lime Bitters
1 dash Seven Stills Prickly Pear Bitters (probably gilding the lily, so can omit if you can’t find these)
Shake with ice and strain into a chilled coupe. No garnish
