The deep toffee sweetness of the Pedro Ximenez sherry and the chili spice from the Ancho Chile Liqueur provide interesting counterpoints to the smoke and tropical fruit notes of the Mezcal and rum while the Lapsang Souchong reinforces the smoke and gives a bit of bitterness. An excellent stirred, yet spicy drink option
1 oz Mezcal
.75 oz Blended Aged Rum (Diplomatico Reserva, El Do 12, or Pampero Anniversario are good options)
.25 oz Lapsang Souchong-infused Smith & Cross Rum (pinch of tea per 1 oz rum, infuse 20-30 minutes before straining out the tea)
.5 oz Ancho Reyes Ancho Chile Liqueur
.25 oz Pedro Ximenez Sherry
1 dash Aromatic Bitters of choice
Stir with ice and strain into a chilled coupe. No garnish
