A Walk To The Lake

A refreshing, homebar-friendly Highball/Paloma riff from Chicago’s excellent bar Lost Lake’s newsletter (part of their GoFundMe to get money to their awesome staff; seriously worth donating! (both to help their staff and for the excellent content delivered twice a week) with notes of citrus and a hint of smoke
The citrus notes in the tequila work nicely with the citrus elements in the soda and are brightened by the fresh lime juice. The mezcal adds a hint of smoke while also boosting the citrus notes and a bit of salt helps all of the flavors pop
1.5 oz Blanco Tequila (100% agave; Tapatio, El Tesoro, etc)
.5 oz Mezcal (Espadin variety; no need to go with Chichicapa in picture, but I was feeling fancy)
Juice of 1/2 lime (about .75 oz)
2 pinches of salt
Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 3 oz Squirt (Mexican version is even better if available nearby). Garnish with a lime wheel and swizzle stick
