A Three Hour Tour

An elegant, refreshing Margarita variation inspired by the Harvest Moon from SF’s Third Rail that takes one on a trip through the spirits of Mexico, Scandinavia, East Asia, and Italy
The hybrid apple/pear low acidity sweetness of the Asian Pear is boosted by the fresh agave flavor of the unaged tequila while the aquavit brings a complementary anise note and the ginger and chamomile/white wine notes from the liqueur and Cocchi Americano add complementary flavors. The touch of lime juice gives a touch of acidity while the bitters boost the spice notes of the aquavit and ginger liqueur
1.5 oz Blanco Tequila
.5 oz Aquavit (anise forward bottle like Krogstad is best)
.75 oz Fresh Asian Pear Juice (Shinko, Shinseiki, Hosui varieties all really tasty)
.25 oz Fresh Lime Juice
.5 oz Cocchi Americano (Italian white-wine based aperitif with citrus peel and chamomile notes)
.25 oz Ginger Liqueur (King’s Ginger, Domaine de Canton both make good versions)
1 dash Celery Bitters (Bitter Truth, Scrappy’s, etc)
Shake with ice and strain into a chilled double rocks glass with a few ice cubes. Garnish with a fan of Asian Pear slices
