A tropical daiquiri riff from Chicago stalwart Lost Lake with notes of herbaceous funk and subtle smoke 🦜🏝🍍 The grassy funk of the unaged, sugarcane-based rhum agricole works with the citrus and smoke notes of the mezcal and the herbaceous/spice notes of the green chile vodka to form a flavorful base that is accented by the tropical and citrus notes of the fresh lime and pineapple juice, the deep sweet/tart nuance of the passionfruit and honey. The falernum and Angostura bring notes of island spices and the dash of Absinthe ties everything together 1 oz Unaged Rhum Agricole (Neisson, Rhum JM, La Favorite, etc) .5 oz Mezcal (Espadin variety) .5 oz Green Chile Vodka (St George makes an excellent bottle, can also infuse your own, or use jalapeño infused blanco tequila as a sub) .5 oz Fresh Pineapple Juice .5 oz Fresh Lime Juice .25 oz Passionfruit Syrup or Liqueur (Small Hand Foods, Giffard) .25 oz Honey (mix with passionfruit to dissolve) .25 oz Falernum (Rum-based liqueur with notes of clove and lime zest; John D Taylor) 1 dash Angostura 1 dash Absinthe (Herbsaint also great) Shake with ice and strain into a chilled double rocks glass with a few ice cubes.
